Shrimp in Mayo Sauce with Peaches

At first, condensed milk and mayonnaise might not seem like an obvious pairing for this dish, but once you try it, you'll quickly realize how perfectly they complement the shrimp. The creamy mayo sauce coats the shrimp without compromising their crispy texture, while the peaches add a refreshing, fruity note that really brings the dish together. It’s no surprise this dish is a popular choice at Chinese restaurants.  I truly enjoy making it at home.


Ingredients
40 -41 raw shrimp  (size 41/50) - peeled & deveined 
1/2 cup canned sliced peaches - drained
1 cup oil for frying shrimp



Shrimp batter
2 large egg whites
1/2 cup corn starch
1/4 teaspoon baking soda
Pinch of salt



Sweet mayo sauce
4 tablespoons mayonnaise
3 tablespoons condensed milk
Mix well


Mix shrimp batter


Mix the Mayo sauce


Dip the shrimp into batter and fry


Put the shrimp on a lined paper towel



Put the fried shrimp into a flat pan over low heat
and toss in mayo sauce and peaches

Directions
  1. Dry shrimp with paper towel. Set aside.
  2. Mix all batter ingredients in a bowl with whisk or fork until smooth. 
  3. Heat oil in a pot over medium heat.
  4. Dip shrimp into batter and drop the coated shrimp into the hot oil one at a time over low heat.  
  5. Fry until both sides turn gold but not dark brown.    
  6. Remove from oil and put them on a plate lined with paper towel.
  7. Put the fried shrimp into a pan over low heat and toss in sweet mayo sauce.  Add peaches, toss again slightly. Remove from heat and transfer to a serving plate. Serve immediately.

Lemon Squares

I have tried so many lemon squares, but none of them ever tastes as delicious as this one.  They are either too sweet or don’t have that yummy buttery taste.   I discovered this recipe when I visited a friend who happened to make lemon squares to serve us that day.   When I had my first bite, I already loved them.  The squares were truly delicious.  They got a buttery taste from the crust, and a lemony flavor from the custard.  I could not wait to ask her for the recipe.  I copied it down, but never asked where she got it.  I have modified the recipe a little so that it suites my taste even better. 

I started making these lemon squares ever since, and have received so many great compliments.  Now I would like to share this recipe with you.  


Crust
1 cup flour
1/2 cup butter (room temperature)
1/4 cup sugar
Pinch salt


Custard
3/4 cup sugar
2 tablespoons flour
1/4 teaspoon baking powder
3 tablespoons lemon juice
2 eggs


Directions
  1. Preheat oven to 350 degrees F.
  2. For the crust, blend the crust ingredients.  Press into a 9 X 9 ungreased pan.  Bake for 20 minute or until lightly browned.
  3. Beat eggs for 1 minute.  Add the remaining custard ingredients into the egg mixture and beat for another 1 minute.
  4. Pour custard over the crust and bake for 25 minutes.
  5. Cut into squares immediately.
  6. Sprinkle top with icing sugar.
